Yogurt and Cucumber Raita

Raita is a yogurt based condiment, typically flavored with fresh herbs, cucumbers or even bananas. In the Ayurvedic system, cooling foods like these add moisture to hot dry foods making them more healthful and more appealing.
(Makes about 2 cups)
1 medium cucumber peeled, seeded and thinly sliced
2 teaspoons salt
1 tablespoon fresh cilantro leaves
2 tablespoons fresh mint leaves
1 cup fresh, whole milk yogurt

Toss the cucumber with the salt and allow it to stand for a few minutes until it has begun to release some of its juice. Squeeze out and discard the excess water. Stir in the herbs and yogurt. Serve the mixture as a condiment with spicy foods.
