Herbs de Provence is a generic name for a blend of herbs that evokes the countryside in the south of France where wild herbs perfume every summer breeze. Give the mixture as a hostess gift or, for a more substantial gift, pair the blend with a pack of frozen lamb racks and a recipe card for roasting the rack, rubbed with salt, pepper, garlic and herbs de Provence. 2 tablespoons fennel seed 2 tablespoons dried lavender flowers 1/4 cup dried oregano 3 tablespoons dried rosemary leaves 1/4 cup dried thyme leaves
1.) Combine the lavender, oregano, fennel, rosemary, and thyme in a blender or a coffee grinder reserved for spices. Store the mixture in an airtight jar and use it to season lamb, chicken, or pizza. It will keep, covered, in a dark, dry place for several months.
